Blackberry wine syrup is everything on an ice cream sundae

August means two things at Duplin Winery: fresh blackberries and making our Blackberry wine. This fruit wine constantly inspires new recipes at our Rose Hill winery restaurant, The Bistro, and in summer it's all about Blackberry ice cream sundaes.

We can't stop thinking about the Blackberry wine syrup recipe Chef Bert created. He's the culinary mastermind behind so many of our Bistro chef specials and Duplin Gourmet specialty food. As soon as he gave us a taste of his Blackberry syrup, we thought ice cream sundae.

The syrup is full of earthy blackberry flavor with a subtle sweetness that brings us back to summer days spent picking wild blackberries that grow in forests up and down the Carolinas shores. They grow in the N.C. mountains, too, which is were we've been getting our wine's blackberries from the same grower for years.

Talk about easy. Bert's Blackberry wine syrup recipe calls for just two ingredients -- Blackberry wine and sugar. Simmer them together on the stove, cool the syrup and then pour it over vanilla ice cream. Garnish with fresh blackberries, whipped cream and a couple cookies. As our "Duplin Dine & Wine" show host Frank says, "It's better than birthday cake!"

Try Blackberry wine syrup on other ice cream flavors like chocolate, chocolate chip, strawberry, pistachio, even peach. The syrup also works on pancakes, shortcake and waffles. We put it in smoothies, too, and, honestly, we've been thinking about it for a glazed holiday ham. We might even put it in our next batch of barbecue sauce. Hmmm.
