Christmas Wine Cake
This scrumptious blend of vanilla, cranberries, walnuts and holiday spices creates a cake that will make your mouth smile! A perfect cake for the family Christmas dinner, or pairs perfectly with coffee and cocoa on a cold day.
Ingredients:
- 4 eggs
- 1 box Butter Golden cake mix
- 1 small box of vanilla pudding
- 1 ¼ cups of Duplin Christmas Wine
- 1 ½ cups fresh chopped cranberries
- ½ cup chopped walnuts
- ½ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- Splash of vanilla flavoring
- Powdered sugar
Directions:
- Preheat oven to 325° F.
- Mix together the eggs, cake mix, pudding, 1 ¼ cups of Christmas Wine until blended well.
- When a consistent texture, gradually stir in by hand the cranberries and walnuts.
- Pour in lightly greased Bundt pan.
- Place in oven at 325° F for approximately 50 to 55 minutes.
- For the glaze, mix ½ cup of Christmas Wine, a splash of vanilla flavoring and 6 teaspoons of powdered sugar in a separate bowl.
- Remove finished bundt cake and poke holes in the top of the cake and pour ½ of the bowl of glaze on the top.
- Let stand and cool for a few minutes and then turn the cake upside down on your cake plate.
- Pour the remaining glaze to coat the top, allowing excess to run down the sides of the cake.
- Garnish with powdered sugar and/or whipped topping, if desired.
