Peach Bellini Basil Spritz
Discover the drink that had every influencer reaching for their camera! This vibrant spritz uses the crisp, bright acidity of Carlos wine to perfectly balance lush Peach Bellini Sweetzer mix. Finished with zesty lemon-lime soda and aromatic basil, it’s a sophisticated, herb-infused refresher that’s pure Southern sunshine in a glass.
Ingredients:
- 8 fresh basil leaves
- 4 bottles Duplin Carlos wine
- 1 packet from a 2-packet box of Duplin Peach Bellini Sweetzer mix
- Two 12-ounce cans of lemon-lime soda, such as Sprite or 7-Up (for a less sweet drink, use sparkling water or club soda)
- Extra basil leaves for garnish
- Fresh peach slices for garnish
Directions:
- Roughly chop the basil leaves and place them in a medium bowl. Muddle the leaves with a cocktail muddler or the back of a spoon until well mashed. Pour 1 bottle of the Carlos wine over the muddled basil leaves. Cover bowl and let mixture steep for at least 1½ hours or refrigerate overnight.
- Strain the basil infused wine into a measuring cup, set wine aside, and discard the basil.
- Pour the Peach Bellini Sweetzer packet into a large pitcher. Add the basil-infused wine and the other 3 bottles of Duplin Carlos wine. Stir well and refrigerate for at least 2 hours.
- Place the glasses in which you plan to serve the drink into the freezer.
- Just before serving, remove the pitcher of wine mixture from the refrigerator. Slowly add the lemon-lime soda or sparkling water, slowly pouring it down the side of the pitcher rather than straight into the middle to help preserve the fizz so the "spritzer" stays "spritzed" longer!
- Remove the glasses from the freezer. Fill glasses with ice. Pour spritzer mixture into frosted glasses. Finish each glass with an extra dash of lemon-lime soda. Garnish each glass with basil leaf and slice of fresh peach.
- Makes 1 gallon (about 16 servings 8-ounce servings).
