Recipe: Honey Mustard Chicken Salad

Ingredients:
  • 1 cup mayonnaise
  • 2 tablespoons honey
  • ¼ cup Duplin Gourmet Muscadine Carolina Mustard Barbecue Sauce
  • 2 tablespoons sweet pickle relish
  • ½ tsp salt (add more or less to taste)
  • ¼ teaspoon black pepper
  • 4 cups cooked chicken, shredded or diced
  • 2 hard-boiled eggs, peeled and chopped
  • 2 celery ribs, finely diced
  • 2 tablespoons minced sweet onion
Directions:
  1. In a large bowl, blend the mayonnaise, honey, Duplin Gourmet Muscadine Carolina Mustard Barbecue Sauce, pickle relish, salt and pepper.
  2. Add chicken, eggs, celery and sweet onion the bowl.
  3. Gently fold the chicken mixture into the dressing until well combined.
  4. Cover bowl and chill in the refrigerator for at least 2 hours before serving to let flavors mingle.
  5. Makes eight ½-cup servings.
