Coffee-Crusted Prime Rib

Ingredients

• ½ cup of Duplin Pink Magnolia
• 1 tbsp finely ground coffee
• 2 tsp chili powder
• 1 tsp onion powder
• 1 tsp coarsely ground pepper
• 1 tsp ground mustard
• ½ tsp salt
• ½ tsp garlic powder
• ½ tsp dried oregano
• ½ tsp cayenne pepper
• 1 Boneless beef rib roast (4 to 5 lbs)
• 2 tbsp olive oil
• 2 cups soaked wood chips, optional

Directions

1. In a small bowl, combine the first nine ingredients.
2. Tie the roast at 1-1/2” to 2” intervals with a kitchen string.
3. Rub seasonings over roast.
4. Cover and refrigerate overnight.
5. Remove roast from refrigerator 1 hour before grilling and brush with oil.
6. Prepare grill for indirect heat, using a drip pan adding half the wood chips if desired.
7. Place roast over drip pan and grill, covered, over medium-low indirect heat for 2 to 2 ½ hours, or until meat reaches desired doneness (for medium-rare = 145 degrees ; medium = 160 degrees ; and well done = 170 degrees), adding remaining wood chips after 1 hour.
8. Let stand for 10 to 15 minutes before slicing.
