Naughty and Nice Mini Cakes

Ingredients

• 3 cups of self-rising flour
• 2 cups of sugar
• 4 eggs
• 1 1/2 cups of vegetable oil
• 1 cup of crushed pineapple, drained well
• 1/4 cup of Duplin’s Naughty and Nice Wine
• 2 tsp of cinnamon
• 1 tsp of nutmeg
• 1/2 tsp of ginger
• 1 tsp of vanilla
• 8 oz of cream cheese, softened
• 1 stick of butter, softened
• 16 oz powdered sugar
• 1 tsp of vanilla

Directions

1. Preheat oven to 350.
2. Mix sugar and oil together. Add eggs one at a time, then add 1 cup of flour at a time until finished. Mixed in crushed pineapple, Naughty and Nice Wine, spices, and vanilla.
3. Bake mini cakes for 10-12 minutes.
4. Icing: Cream butter and cream cheese, then mix in powered sugar and vanilla. Spread carefully over cupcakes.
