Garlicky Scuppernong Green Beans

Ingredients:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 14 to 16 ounces of frozen French green beans (see cook's note)
  • 1 cup of Scuppernong wine
  • Salt and ground black pepper to taste

Cook's note: French green beans are more slender, cook quicker, and are more tender than whole green beans. You could also substitute French-cut green beans for this recipe. If you use fresh green beans, plan on about 1½ pounds, and blanch them for 5 minutes then cool them before proceeding with this recipe.

Directions:

  1. Heat the oil in a skillet over medium heat. Brown the garlic in the oil and season with salt and pepper.
  2. Add the green beans and toss to coat. Pour the Scuppernong wine over the green beans. Simmer until the wine reduces in volume by half, stirring occasionally, about 15 minutes. Makes 6 to 8 servings.
