Frank's Favorite Salad
If you've never experienced the wonderfully nutty flavor of arugula, this salad is the perfect introduction, says Duplin Dine & Wine host Frank. The leafy green available in the produce section of most supermarkets plays well against sweet and salty elements like the fresh oranges, pomegranate, golden raisins and parmesan cheese in this salad. Frank adds sliced almonds for crunch and a protein punch. Duplin Gourmet Muscadine Orange Poppy Seed Dressing provides a delicate sweet-tang that brings everything together. A wonderful vegan side or main-course salad on its own or bump it up with seared salmon, steamed shrimp or leftover rotisserie chicken.
Ingredients:
- 5 ounces fresh arugula
- 2 medium oranges, peeled, halved and cut into 1/4- to 1/2-inch thick slices
- ½ cup golden raisins
- ½ cup sliced almonds
- ½ cup pomegranate seeds
- ½ cup shaved parmesan cheese
- ¼ to ½ cup Duplin Gourmet Muscadine Orange Poppy Seed Dressing
Directions:
- Place half of arugula in a large salad bowl.
- Top arugula with half of the orange slices, half of the raisins, half of the almonds, half of the pomegranate seeds and half of the Parmesan cheese.
- Drizzle with 2 to 3 tablespoons Duplin Gourmet Muscadine Orange Poppyseed Dressing.
- Scatter remaining arugula in salad bowl. Arrange the remaining orange slices over the arugula. Scatter on the other half of the raisins, then the almonds and then the pomegranate seeds.
- Drizzle with 2 to 3 tablespoons Duplin Gourmet Muscadine Orange Poppyseed Dressing. Scatter remaining parmesan shavings over the salad.
- Gently toss at the table and serve.
- Makes 4 side salad servings or 2 main-course salad servings.
