Naughty & Nice Mini Cakes
Sugar and spice and everything nice! This vanilla mini cupcake recipe combines the sweetness of pineapple and one of our favorite Christmas wines, Naughty & Nice. Even better than the taste, this is so easy to make and perfect for parties!
Ingredients:
- 3 cups of self-rising flour
- 2 cups of sugar
- 4 eggs
- 1 1/2 cups of vegetable oil
- 1 cup of crushed pineapple, drained well
- 1/4 cup of Duplin’s Naughty & Nice Wine
- 2 tsp of cinnamon
- 1 tsp of nutmeg
- 1/2 tsp of ginger
- 1 tsp of vanilla
- 8 oz of cream cheese, softened
- 1 stick of butter, softened
- 16 oz powdered sugar
- 1 tsp of vanilla
Directions:
- Preheat oven to 350.
- Mix sugar and oil together. Add eggs one at a time, then add 1 cup of flour at a time until finished. Mixed in crushed pineapple, Naughty & Nice Wine, spices, and vanilla.
- Bake mini cakes for 10-12 minutes.
- Icing: Cream butter and cream cheese, then mix in powdered sugar and vanilla. Spread carefully over cupcakes.
