Duplin Thanksgiving Gravy
Duplin Thanksgiving Gravy gets a little hint of muscadine loveliness from Duplin Carlos. Or add a hint of sweetness with Duplin Magnolia.
Ingredients:
- 4 cups turkey stock
- ½ cup Duplin Carlos or Duplin Magnolia wine
- 1/3 cup flour
- ¼ cup fat skimmed from turkey drippings
- Salt to taste
- Black pepper to taste
Directions:
- In a small saucepan, combine turkey stock and wine. Heat the mixture until it almost comes to a simmer. Turn off the heat.
- In a medium-size saucepan, whisk together flour and fat skimmed from turkey drippings. Set pan on the stove over medium-high heat and cook mixture, stirring constantly for 1-2 minutes, to create a roux.
- Slowly whisk heated stock into the roux, stirring constantly. Continue cooking over medium to medium-high heat until gravy thickens.
- Makes about 4 cups.
