St. Patrick's Day Hot Corned Beef Dip

When its time to party for St. Patrick's Day, everyone wants classic Irish comfort food. If you don't have time to cook your favorite corned beef and cabbage recipe, this two-for-one dip based on the famous Reuben sandwich is a fast and easy substitute.

We call this a "two-for-one dip" because you can serve it two ways.

As a hot, creamy, cheesy dip full of corned beef, Swiss cheese and nice sweet mustard kick, Hot Reuben Dip is perfect for a St. Patrick's Day party. The recipe comes together in about 20 minutes, including cooking time.

The mixture for this dip also makes an excellent grilled cheese sandwich. To make a sandwich, don't bake the dip. Instead, spread a few tablespoons between slices of rye or pumpernickle bread buttered on the outside. Then grill the sandwiches in skillet just like you would for any grilled cheese. Serve the sandwiches with potato soup for St. Patrick's Day.
